Comfort food season is HERE! And our Whipped Cauliflower is the perfect option for when you want creamy, warm, tummy blanket foods without the heft and weight of mashed potatoes.
An immersion blender makes quick work of those florets, but a masher, or blender, will work just fine in its stead!

makes 3 cups
2 medium heads cauliflower, chopped to large pieces (core can be included)
I head garlic, wrapped in foil and roasted with a smidge of EVOO for 30 minutes at 350f
1/4 cup EVOO
2 tbsp nutritional yeast
Pinch white or black pepper
1.5 tsp sea salt
Cook cauliflower in boiling water in a small saucepan for 12-14 minutes, until fork tender. Drain, add remaining ingredients, and immersion blend until smooth. Alternatively, you can transfer everything to a blender and blend (be very careful when blending hot foods!!) or mash with a potato masher.
Makes a great shepherd's pie topper, and is lovely with the gravy of your choice!
